Love in the Wind

It whispers, it roars. It tears through trees, ripping off branches or scattering petals like rain. Ripples in the pond, waves in the sea. Sends leaves skittering across the road. Makes the rain lash the windows. It is strong, it is gentle, it is powerful.

"For I am sure that neither death nor life, nor angels nor rulers, not things present nor things to come, nor powers, nor height nor depth, nor anything else in all creation will be able to separate us from the love of God in Christ Jesus our Lord." -Romans 8:38-39

The shield

"Finally, be strong in the Lord and in the strength of his might. Put on the whole armor of God, that you may be able to stand against the schemes of the devil. For we do not wrestle against flesh and blood, but against the rulers, against the authorities, against the cosmic powers over this present darkness, against the spiritual forces of evil in the heavenly places. Therefore take up the whole armor of God, that you may be able to withstand in the evil day, and having done all, to stand firm. Stand therefore, having fastened on the belt of truth, and having put on the breastplate of righteousness, and, as shoes for your feet, having put on the readiness given by the gospel of peace. In all circumstances take up the shield of faith, with which you can extinguish all the flaming darts of the evil one; and take the helmet of salvation, and the sword of the Spirit, which is the word of God, praying at all times in the Spirit, with all prayer and supplication." -Ephesians 6:10-18

When I read this last summer (I think), I was struck that Paul said "in every circumstance" to take up your shield of faith. That should be my instinct whenever something comes up, good or ill. The evil one is on the prowl even in the happy times (like at a birthday party), and we must be ready with our shield to deflect the darts (judgmental or jealous thoughts). I think it's amazing that God has given this weapon--simple faith in Him--that will enable us to "extinguish all the flaming darts of the evil one".

Just like Mom's!

Finally, I got myself a good grain-free meatball recipe. I experimented with a couple recipes, but they've always come out dry. Then I tried this one using half ground turkey, and that was much better. People didn't like the flavor as much however (and the gravy was pretty much a disaster. Don't ask.), so today I tried to recreate the flavors of my Mom's recipe. Sans breadcrumbs of course. 

It worked!* 
 
I'd say that using a half beef and half turkey mix is the key to getting the best "normal" consistency.

Grain-free Meatballs
Makes about six dozen
 
1 lb. ground beef
1 lb. ground turkey
2 eggs
2 T. coconut flour
1/2 c. chopped onion
2 t. dried parsley
1 1/2 t. salt

Set oven to 350. Combine all ingredients in large bowl. Using a cookie dough scoop (or your hands), shape meatballs and place in two 9x13 pans. Bake for 20 minutes, and continue with next batch.
 
*well, the meatballs did. The gravy failed again...it turned into a meatball soup, which was still tasty.
